Wild Mallard Whole Duck
Whole, oven-ready wild duck is a real treat. You will find the meat dark and full of flavour, and one whole mallard will usually serve two people.
Wild ducks, like all game birds, have less fat than farmed animals as a result of their natural diet and active lives. For this reason, the second rule for wild duck is to be careful not to overcook it. Perfectly cooked wild duck is juicy and tender. The breasts are not as plump as farmed duck but make up for this with their rich gamey flavour.

Wild and natural, hormone-free and low in fat and cholesterol. Either roast whole or portion and casserole – whichever way you prefer, you can be sure of a tasty dish the whole family will love.
To roast, preheat the oven to 220°C, gas mark 7. Place the duck in a roasting tin, prick and rub salt into the skin. Place the bird on its side and cook in the centre of the preheated oven for 35-40 minutes. Baste frequently during cooking and halfway through the cooking time turn the duck on to its other side.
