Whole Lamb Salami
A Sardinian delicacy made in England, cured from British lambs who graze the upland meadows. The tender meat is rolled in crushed garlic, salts and spices then cured for 4-5 months.
This cure is moist, and not too dry, and the mouthfeel is spicy/herby and peppery, not greasy, with a lingering finish in which the pepper balances well with the cured lamb.
This piece is supplied as a whole stick, so you can easily hand slice it exactly as you like it.
