This is the kind of smoked turkey you want to be served in thick, glistening slabs that are shiny with juice and fork-tender, with a deep smoke flavour.
Making our Turkey Pastrami is a slow process – the breast is soaked in brine for two weeks then gently smoked for twenty hours to produce a deep mouth-watering spiced fine flavoured delicatessen.
