Hung on the bone for at least 28 days to develop an intense depth of flavour and delicious texture, our British Salmon cut of Beef is from slowly reared cattle that are naturally raised and grass-fed.
This cut of beef is lean and gristle free with some slight marbling through the middle, perfect for a roast dinner with all the trimmings. The salmon cut gets its name because the singular muscle is shaped like a salmon.
The cut comes from the back of the cow and is generally leaner than Topside so should be roasted slowly keeping it a bit pink in the middle.
