Lamb Barnsley Chop
These tender, succulent ‘butterfly’ chops are chunky and packed with flavour. Barnsley Lamb Chop is a magical cut of grass-fed lamb, prepared but saddle of lamb and is effectively a double loin chop.
Twice the satisfaction then! You can treat these the same way you would a lamb loin chop. Simply dust with a pinch of salt and pepper, melt some butter in a hot pan and fry for just 2-3 minutes on each side.
Great oven cooked too – marinate in garlic, olive oil and fresh rosemary and then bake for up to twenty minutes. Serve with a side of new potatoes and a mozzarella salad.
