Ham Hock Knuckle (Shank)
Taken but ankle and calf region of the pig, our ham hocks are incredibly meaty and full of flavour.
We leave the skin on which keeps the meat tender while cooking.
Cooked on low temperature over a long period, the hock will produce tender meat that is traditionally used in ham and pea soup. The leftover meat also makes a delicious ham and mustard sandwich.
