A 6 week matured traditional delicacy but Italian regions of Umbria and Lazio, expertly cured, salted and seasoned using British pork jowl/cheeks.
Guanciale has a much more intense and sweeter flavour than its rival, belly bacon, and has a silky golden fat that crisps beautifully and simply melts in your mouth.
