Beef Osso Bucco (Shin On Bone)
Ideal for braising, with rich bone marrow that provides intense beefy flavour.
Osso Bucco is an Italian term that means ‘bone with a hole’. It refers to the marrow hole that is at the top centre of the cut. The marrow melts with slow cooking to create tender and delicious meat.
Our grass-fed beef Osso Bucco is an extremely nutritious cut that is high in vitamins and minerals and creates the most incredible thick, glistening sauce.

Description
We recommend braising Osso Bucco for the best results. Start by coating it lightly in well-seasoned flour. Heat a cast-iron casserole dish and add butter and a little oil. Fry the pieces in small batches until they are sealed and browned all over. Remove the steaks and set them aside. Deglaze the pan and add finely chopped onion, carrot, and celery. Once soft, add braising liquid, return the Osso Bucco, and braise slowly for a few hours. You can also do this in a slow cooker.
