Our Venison Haunch is from wild Sika deer from The Bowland Forest, which have grazed freely on a mixed diet of grass, berries and fruits, apples, acorns and chestnuts which gives it the wonderfully woody, almost fruity flavour.
The meat is matured for 10 to 14 days to tenderise and allow the beautiful flavour to develop fully.
