Our Wing Rib Steak is cut from the first three rib bone section of Sirloin. The chine bone is removed, excess fat is trimmed and then the ribs are french trimmed. The minimum 45-day ageing process makes the flavour more concentrated, whilst at the same time, the meat tenderises for a steak that simply melts in the mouth.
