This warming and comforting soup will be popular with the whole family. The browned Italian Tuscan sausage and potatoes make it a hearty soup, perfect for a lunch or dinner soup. Add a salad and crusty bread for a fabulous nutritious meal.
1.In a large pot over medium heat, brown sausage, breaking it into bite-size pieces with a spoon. Once sausage is browned, remove from pot and set aside.
2.Add onion, carrots and celery to pot and cook over medium heat, stirring occasionally, until tender, about 10 minutes.
3.Add garlic and thyme and cook for 2 minutes.
4.Add potatoes, tomatoes with juice, vegetable broth, white wine and cooked sausage. Stir and bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, until potatoes are tender, 20-25 minutes.
5.Add kale and simmer until it wilts, about 2 minutes. Season with salt and pepper to taste.
6.Serve with parmesan cheese and crusty bread for dunking.
