This slow cook barbacoa beef is so flavorful and tender, and it’s so easy to make and versatile! We like to make tacos with it for a simple weeknight meal, but it’s also delicious on crisp corn tortillas, burrito bowls, in enchiladas, or just about any other use you can think of for spicy shredded beef.
1.Turn heat to high and heat oil in the bottom of slow cooker.
2.Add the diced beef and brown for 10 minutes. Add all the remaining ingredients and give it a good mix.
3.Cook on high for 2-3 hours then turn the heat down to low for 1-2 hours.
4.When the beef has fallen apart serve in soft or crisp corn tortillas with fresh salsa, sour cream, lime wedges, and chopped cilantro.
