Method
- 1.In a small bowl, sprinkle chicken breasts with jerk seasoning and drizzle with olive oil.
- 2.Grill chicken for 4 to 5 minutes per side, or cook in a pan over medium heat. Let cool and then thinly slice.
- 3.Roast both peppers by setting them directly over the flame of a gas burner. Turn every few minutes until all sides are charred. Plunge them into ice water and remove the skins. Slice into thin slices. Alternately, you can roast the peppers in a 200 degree oven for 45 minutes.
- 4.Roll or stretch dough into a 12-inch circle. Place on a lightly floured pizza pan.
- 5.Brush the dough with olive oil. Spread desired amount of pizza sauce on dough. Sprinkle with mozzarella cheese and toppings as per your liking. Sprinkle with a little more mozzarella cheese.
- 6.Slide pizza into the oven and bake until crust is golden, about 9 to 10 minutes.

- 2 chicken breast fillets, pounded thin
- 1 red bell pepper
- 1 yellow bell pepper
- 220g ready made pizza dough (220g makes one 12" pizza)
- 180g shredded mozzarelle cheese
- 4 slices bacon, cooked
- 45g thinly sliced onion, yellow or red
- 1 green onion, sliced
- 2 tbsp Smokey's Jamaican Jerk BBQ Rub Shaker
- 200g tomato pizza sauce
