Fried Buttermilk Chicken Sandwich

Sometimes you just need a sandwich. A big sandwich. Or a crispy fried chicken burger! One that drips when you take a bite and is juicy and full of flavour. This is for the days when a salad won’t cut it. Yum!

Method

  • 1.Marinate - In a plastic bag or glass bowl, combine the chicken with all the wet ingredients. Marinate in the fridge for 4-6 hours or overnight if you can.
  • 2.Batter - In a shallow bowl, combine all the dry ingredients except the oil.
  • 3.Slaw - Toss all your ingredients together!
  • 4.Fry - Heat the cooking oil in a frying pan until a speck of water sizzles across the top. Using tongs, shake excess liquid off the chicken pieces. Coat each piece in the dry flour mix. Add to the hot oil. Fry for 5 minutes on one side, then 2-3 minutes on the other side until golden brown and crispy. Drain on a paper towel lined plate and sprinkle with a little more salt (to taste).
  • 5.Assemble - Build your ultimate fried chicken sandwich! We like toasted buns loaded bacon, Swiss cheese, honey dijonnaise, pickles, and slaw!

Ingredients (wet)

  • 4 boneless skinless chicken breasts
  • 1 tbsp all purpose chicken seasoning (ingredients like paprika, pepper, garlic / onion powder, etc.)
  • 240ml buttermilk
  • 1 large egg
  • Shredded cabbage and shredded carrots
  • 60ml mayo or Greek yogurt
  • 2 tbsp white vinegar
  • 1/2 tbsp sugar
  • 1/4 tsp salt

Dry Ingredients

  • 350g flour
  • 120g cornstarch
  • 1 tsp baking powder
  • 2 tsp salt
  • 1 tbsp seasoning mix
  • Frying oil
